Strongly whisk 3 egg yolks with icing sugar until the mixture whitens and becomes frothy. Then add the mascarpone and mix until the result is very homogeneous.

Whip 3 egg whites until stiff, adding a pinch of salt, then mix them with the mascarpone cream. Please note that to keep the mixture frothy and light, the whites should not be "broken". Gently mix from top to bottom with a silicone spatula, turning your container a
quarter of a turn each time.

Prepare a large cup of strong coffee, preferably an espresso. Add the Amaretto, an Italian almond alcohol that will incredibly flavor your dessert, then mix.

Cut the ends of the cookies so that they adhere perfectly to the wall of your dish. Use the tips to complete the holes in the center of your tiramisu. Spread a layer of mascarpone cream on the bottom of the dish, then place a layer of lightly moistened cookies with Amaretto coffee.
Finally
Repeat the operation, finishing with a layer of mascarpone cream that you sprinkle with bitter cocoa powder or chocolate shavings. Place in the fridge for at least 3 hours.
